How to Make Cake Pops from Leftover Cake

Step 1: Crumble the Cake

Using a stand mixer or your hands, crumble the leftover cake into fine crumbs. If the cake is dry, add a bit of frosting to help bind the crumbs together. The mixture should be soft but firm enough to hold its shape when rolled into balls.

Step 2: Roll Into Cake Balls

Take small portions of the cake mixture and roll them into 1-inch balls using your hands or a cookie scoop. Place them on a parchment-lined baking sheet.

Step 3: Freeze the Cake Balls

Pop the tray into the freezer for 30 minutes to help the cake pops hold their shape before dipping them into chocolate.

Step 4: Melt the Chocolate

In a microwave-safe bowl, melt the candy melts or chocolate chips according to the package instructions. If needed, add a tablespoon of coconut oil to create a smoother consistency. Stir until fully melted and creamy.

Step 5: Dip & Decorate

Using a skewer, fork, or cake pop stick, dip each cake pop into the melted chocolate. Swirl to coat completely and let excess chocolate drip off. Before the coating sets, add sprinkles, crushed nuts, or edible glitter for decoration.

Step 6: Let Them Set

Return the cake pops to the parchment-lined baking sheet and place them in the fridge for 30 minutes until the chocolate hardens completely.

  • How Much Frosting to Add? If your cake is fresh and moist, you may only need a small amount of frosting. Dry cake will require more to bind the mixture.
  • Best Chocolate for Coating? Candy melts work best since they harden quickly, but you can also use white, milk, or dark chocolate chips.
  • Storage Tips: Store cake pops in an airtight container in the fridge for up to one week or freeze them for up to three months for a longer shelf life.

Old Cake Cake Pops

Save that old cake or those cake cutout scraps and turn it into cake pops. In 2023, I turned our remaining frozen wedding cake into cake pops.

Ingredients
  

  • Leftover cake or cake cutout scraps
  • ½ cup of frosting
  • Candy melts or chocolate chips
  • Decorative sprinkles or toppings

Instructions
 

  • Crumble the leftover cake into fine crumbs using a stand mixer. If the cake is dry, add a little frosting to help bind the crumbs together.
  • Using a spoon, take portions of the cake crumbs and roll into one inch balls. Place on a baking sheet lined with parchment paper.
  • Put the baking sheet in the freezer for 30 minutes to firm up the cake balls.
  • In a microwave safe bowl, melt candy melts or chocolate chips according to package instructions. You can add a tablespoon of coconut oil if needed. Stir until smooth and creamy.
  • Dip each cake pop into melted chocolate, swirling to coat completely. Allow excess chocolate to drip off before placing the cake pop back onto the parchment lined baking sheet.
  • While the chocolate has not yet dried, add sprinkles or toppings if desired.
  • Place the baking sheet in the fridge for 30 minutes to allow the chocolate to set completely.

Notes

These freeze well and make great treats for parties or special occasions! 
Measurements of frosting, candy melts and sprinkles will vary based on how much leftover or stale cake you have to use.
