Refreshing Cucumber Feta Salad: A Quick and Healthy Mediterranean Dish

Ingredients

  • 1 large cucumber, cubed
  • ½ cup crumbled feta cheese
  • ¼ cup red onion (optional), thinly diced
  • ½ cup chopped red bell pepper
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Start by washing and drying your cucumber and bell pepper. Peeling the cucumber is optional, but it adds a nice crunch.
  2. Dice the cucumber, red onion, and bell pepper. Place all ingredients into a large mixing bowl.
  3. Add the crumbled feta cheese to the mix.
  4. Drizzle balsamic vinegar and olive oil over the salad, followed by salt and pepper to taste.
  5. Toss everything gently to combine, ensuring the vegetables are evenly coated with the dressing.

Recipe Notes

This salad is highly customizable. In the summer, if you have an abundance of tomatoes from your garden, you can swap the bell pepper for halved cherry tomatoes. If you prefer a different cucumber variety, feel free to substitute 2 large cucumbers with 6 mini seedless cucumbers.

Cucumber Feta Salad

Ingredients
  

  • 1 large cucumber cubed
  • ½ cup crumbled feta cheese
  • ¼ cup red onion thinly diced optional
  • ½ cup chopped red bell pepper
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions
 

  • Wash and dry the cucumber and pepper. Peel if desired, but it’s not necessary. Dice the cucumbers and add to a large mixing bowl.
  • Dice ½ small red onion for about ¼ cup of red onion. Add to the mixing bowl.
  • Dice 1 small red bell pepper. Add to the mixing bowl.
  • Add crumbled feta cheese to the bowl.
  • Drizzle olive oil and balsamic vinegar over the salad. Add salt and pepper to taste.
  • Gently toss the salad ingredients together until everything is well coated.

Notes

In the summer when our garden explodes with tomatoes, I love to substitute the bell pepper for cherry tomatoes sliced in half or quarters depending on size.
If preferred, you can substitute 2 large cucumbers with 6 mini seedless cucumbers.
