Course Main Course, Side Dish, Snack
- 1 large cucumber cubed
- ½ cup crumbled feta cheese
- ¼ cup red onion thinly diced optional
- ½ cup chopped red bell pepper
- ¼ cup balsamic vinegar
- 2 tablespoons olive oil
- salt and pepper to taste
Wash and dry the cucumber and pepper. Peel if desired, but it’s not necessary. Dice the cucumbers and add to a large mixing bowl.
Dice ½ small red onion for about ¼ cup of red onion. Add to the mixing bowl.
Dice 1 small red bell pepper. Add to the mixing bowl.
Add crumbled feta cheese to the bowl.
Drizzle olive oil and balsamic vinegar over the salad. Add salt and pepper to taste.
Gently toss the salad ingredients together until everything is well coated.
In the summer when our garden explodes with tomatoes, I love to substitute the bell pepper for cherry tomatoes sliced in half or quarters depending on size.
If preferred, you can substitute 2 large cucumbers with 6 mini seedless cucumbers.
