Cinnamon Vanilla Syrup: A Cozy, Aromatic Sweetener for Coffee, Cocktails, and More
A Hug in a Cup: Why Cinnamon Vanilla Syrup Belongs in Your Fridge
There’s something about the combination of cinnamon and vanilla that instantly makes any drink or dessert feel cozier. The warmth of cinnamon paired with the creamy, floral sweetness of vanilla is nostalgic, comforting, and endlessly versatile. This cinnamon vanilla syrup is incredibly simple to make at home, and it instantly upgrades your lattes, teas, cocktails, and even baked goods. Whether you’re prepping for fall, creating an at-home coffee bar, or simply love a flavorful twist in your beverages, this syrup is one to keep on hand.

Ingredients
White Sugar
Filtered Water
Vanilla Bean Paste
Cinnamon Sticks
Directions
- In a medium saucepan, combine the sugar, water, vanilla bean paste, and cinnamon sticks.
- Place over medium heat and bring the mixture to a gentle simmer, stirring occasionally until the sugar is completely dissolved.
- Once dissolved, continue simmering for 4–5 minutes to allow the flavors to infuse fully.
- Remove the pan from heat and let the syrup cool to room temperature.
- Transfer the syrup to a clean container. For extra flavor, you can leave the cinnamon sticks in the syrup to continue steeping in the fridge.
- Store in an airtight container in the refrigerator for up to one month.
Substitution Tip: If you don’t have vanilla bean paste, you can substitute with an equal amount of vanilla extract. The paste gives a more concentrated vanilla flavor and those beautiful specks of vanilla bean, but extract will still give you that rich, aromatic essence.
How to Use Cinnamon Vanilla Syrup
This syrup is a must-have for anyone who enjoys flavored coffee, but its use goes far beyond lattes. Here are some creative and delicious ways to use cinnamon vanilla syrup:
- Lattes & Cappuccinos – Add 1–2 tablespoons to your morning coffee or espresso drink for a sweet, spiced twist.
- Chai Tea or Black Tea – Stir it into a hot mug of tea to enhance the flavor and sweetness.
- Cocktails – Try it in an Old Fashioned, whiskey sour, or spiced rum drink for depth and warmth.
- Sparkling Water – Add a splash to soda water for a homemade cinnamon vanilla soda.
- French Toast & Pancakes – Drizzle it over breakfast in place of maple syrup for something different.
- Oatmeal & Yogurt Bowls – Sweeten your morning bowl with a swirl of syrup.
- Baking – Brush onto cakes or quick breads as a flavor-boosting glaze.
- Desserts – Pour over vanilla ice cream, warm apple pie, or bread pudding.
Flavor Notes and Adjustments
This syrup brings a bold cinnamon spice with mellow vanilla undertones. You can tweak the flavor intensity to suit your taste:
- Stronger cinnamon? Simmer for longer or use an extra cinnamon stick.
- More vanilla? Add an extra teaspoon of vanilla bean paste or extract after removing from heat.
- Sweeter syrup? Use slightly less water for a more concentrated sweetness.
It’s also worth experimenting with different types of cinnamon if you’re a spice enthusiast. Ceylon cinnamon offers a softer, more floral flavor, while cassia cinnamon brings that bold, spicy kick most people associate with cinnamon flavoring.
Great for Gifting
If you’re looking for a thoughtful, homemade gift, this syrup is perfect. Bottle it in a swing-top glass bottle, tie it with twine or a ribbon, and include a label with serving ideas. It’s a sweet addition to any holiday gift basket, teacher appreciation gift, or hostess thank-you.
Storage and Shelf Life
This cinnamon vanilla syrup will keep in the fridge for up to one month. Be sure to store it in an airtight glass container for best results. Before each use, give it a gentle shake, especially if you left the cinnamon sticks inside for continued flavor infusion.

There’s nothing like a touch of cinnamon and vanilla to make your favorite beverages and desserts feel just a little more special. With only a few simple ingredients and minimal effort, you can make this comforting, spiced syrup right in your own kitchen.
