How to Make Veggie Chili:
- Heat olive oil in a large pot over medium heat. Add diced onion, minced garlic, and diced carrots. Sauté for about 4-5 minutes until softened.
- Drain and rinse the kidney beans and black beans. Add them to the pot along with diced tomatoes and vegetable broth.
- Stir in ⅓ cup of the homemade chili seasoning mix, ensuring everything is evenly coated.
- Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for 20-25 minutes, stirring occasionally.
- If using Impossible Burger, cook it separately according to package instructions, then stir it into the chili during the last five minutes of cooking.
- Serve hot, garnished with shredded cheese, tortilla chips, or crackers as desired.
Crockpot Version:
For a hands-off approach, simply add all ingredients to a slow cooker and cook on low for 6-8 hours. If using Impossible Burger, cook it separately and stir it in at the end.
How to Use Leftover Chili:
- Chili Cheese Dip: Spread cream cheese in a baking dish, top with chili and shredded cheese, then bake until bubbly. Serve with tortilla chips.
- Chili Stuffed Peppers: Fill halved bell peppers with chili, top with cheese, and bake at 375°F for 20 minutes.

- Freezing: Let cool completely before transferring to freezer-safe containers. Freeze for up to 3 months.
- Reheating: Warm on the stovetop over medium heat, adding a splash of broth if needed to loosen the consistency.

Veggie Chili w/ Chili Seasoning
Ingredients
Chili Ingredients
- 1 tablespoon olive oil
- 1 medium onion diced
- 1 to 2 tablespoons garlic minced
- 2 medium carrots diced
- 1 16 ounce can kidney beans
- 1 16 ounce can black beans
- 1 16 ounce can diced tomatoes
- 4 cups vegetable broth
- ⅓ cup of chili seasoning mix
- 12 ounces Impossible burger optional
- salt and pepper to taste
Chili Seasoning Mix
- 6 tablespoons chili powder
- 2 teaspoons cayenne pepper
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons cumin
- 1 tablespoon paprika
- 2 tablespoons salt
- 2 teaspoons pepper
Instructions
To Make Chili Seasoning:
- Add all of the ingredients to a 16 ounce pint jar.
- Seal the jar tightly and shake until all the ingredients are well mixed.
- Store the jar in a cool, dry place like your pantry or a cabinet until it’s ready to use.
- Note: ⅓ cup of the mix is equivalent to one seasoning packet.
To Make Chili:
- Add diced onion, minced garlic, diced carrots and olive oil to a large pot and cook for 4 to 5 minutes.
- Drain and rinse kidney beans and black beans.
- Add beans, tomatoes and vegetable broth to the pot. Add homemade chili seasoning mix, or a chili seasoning packet. Mix until combined.
- Bring the mixture to a boil, and then reduce the heat to low. Simmer uncovered for 20 to 25 minutes, stirring occasionally. The chili will thicken during this time.
- If using Impossible Burger for added protein, cook it according to package instructions in a separate skillet.
- Once cooked, stir into the chili and let simmer for an additional 5 minutes.
- Serve hot, garnished with preferred toppings such as shredded cheese, crackers or tortilla chips.
