Homemade Vanilla Bean Syrup – A Must-Have for Coffee Lovers
Vanilla syrup is a staple for coffee lovers, bakers, and cocktail enthusiasts alike. Unlike traditional vanilla extract, using vanilla bean paste in this recipe enhances the syrup with a deeper, more robust flavor and visible vanilla bean specks.
This homemade vanilla bean syrup is perfect for lattes, iced coffee, desserts, and even cocktails. Plus, it’s incredibly easy to make with just three simple ingredients!

Why Use Vanilla Bean Paste Instead of Extract?
Vanilla bean paste provides a stronger, richer vanilla flavor compared to extract. It includes real vanilla bean seeds, which add depth and aroma to the syrup. If you love the taste of vanilla and want a more pronounced, natural flavor, this syrup is a game-changer. However, if you don’t have vanilla bean paste, you can substitute it with 4 teaspoons of vanilla extract.
Ways to Use Vanilla Syrup
This homemade vanilla bean syrup is incredibly versatile. Add it to coffee, lattes, teas, cocktails, and desserts for a rich, sweet flavor. It’s also perfect for pancakes, waffles, yogurt, and even drizzling over fruit. For a fun twist, mix it into whipped cream, frosting, or milkshakes for an extra layer of vanilla goodness.
Storage and Tips
- Always store your vanilla syrup in an airtight container in the fridge to keep it fresh for up to a month.
- For a thicker syrup, let it simmer for a few extra minutes before removing it from heat.
- If using vanilla extract instead of paste, add it after removing the syrup from heat to prevent it from burning off.
I prefer to store my simple syrups in mason jars, and use lids like pour lids from Mason Jar Lifestyle. Alternatively, I also like to use these bottles which are aesthetic!

Each labels has the recipe to refill the dry mix jar, as well as the recipe to make the item if applicable.

Vanilla Simple Syrup
Ingredients
- 1 cup white sugar
- 1 cup filtered water
- 1 tbsp vanilla bean paste
Instructions
- In a medium saucepan, combine sugar and water over medium heat. Stir occasionally until the sugar dissolves completely.
- Once the sugar is fully dissolved and the liquid turns clear, remove the pan from heat.
- Stir in the vanilla bean paste and whisk if needed to fully incorporate it into the syrup.
- Allow the syrup to cool to room temperature, then transfer it to a clean, airtight container.
- Store in the refrigerator for up to one month.
