Gingerbread Simple Syrup

- 1 cup filtered water
- 1 cup fresh ginger
- 1 cup light brown sugar
- ½ cup unsulfured molasses
- zest of half of one orange
- 1 tsp ground cinnamon
- ½ tsp whole cloves
- ¼ tsp ground allspice
- 1 tbsp vanilla extract
Peel and dice around one cup of fresh ginger.
2.In a medium saucepan, combine sugar, water, ginger, molasses, zest and spices over medium heat. Bring mixture to a gentle simmer, stirring occasionally until the sugar dissolves.
Simmer for 5 minutes.
Remove from the heat and stir in vanilla extract. Let the syrup cool to room temperature. Strain the mixture using a fine mesh strainer, then transfer liquid to a clean container.
Store the simple syrup in an airtight container in the refrigerator for up to three weeks.
