Cornbread Mix

This make-ahead cornbread mix is easy to put together, so you could have fresh cornbread any day of the week. You can make a loaf or 12 muffins.

Ingredients
  

Dry Mix Ingredients

  • 3 cups cornmeal
  • 3 cups all purpose flour
  • 2 cups white sugar
  • 3 tablespoons baking powder
  • 1 tablespoon salt

To Make Cornbread:

  • 3 cups Dry Mix
  • 2 eggs
  • ½ cup melted unsalted butter
  • 1 cup milk

Instructions
 

For Dry Mix:

  • To a large bowl, add cornmeal, flour, sugar, baking powder and salt.
  • Mix thoroughly until all ingredients are combined.
  • Transfer to a half gallon mason jar and seal tightly. Store in a cool, dry place.

The Make Cornbread

  • Add Dry Mix, eggs, melted unsalted butter and milk to a bowl.
  • Mix until just combined.
  • Add the batter to a greased loaf pan or cupcake tins.
  • Bake in a preheated oven at 400°F for 20 to 30 minutes, depending on pan size. Bake until the fork comes out clean.
  • Let cool. If desired, add butter to the top.

Notes

Traditional cornbread is typically savory and does not contain sugar. If you like a more savory flavor, feel free to leave it out.
