Cornbread Mix

This make-ahead cornbread mix is easy to put together, so you could have fresh cornbread any day of the week. You can make a loaf or 12 muffins.

Dry Mix Ingredients

cornmeal

all purpose flour

white sugar

baking powder

To Make Cornbread:

Dry Mix
2
eggs
½
cup
melted unsalted butter
1
cup
milk
Instructions
For Dry Mix:
To a large bowl, add cornmeal, flour, sugar, baking powder and salt.
Mix thoroughly until all ingredients are combined.
Transfer to a half gallon mason jar and seal tightly. Store in a cool, dry place.
The Make Cornbread
Add Dry Mix, eggs, melted unsalted butter and milk to a bowl.
Mix until just combined.
Add the batter to a greased loaf pan or cupcake tins.
Bake in a preheated oven at 400°F for 20 to 30 minutes, depending on pan size. Bake until the fork comes out clean.
Let cool. If desired, add butter to the top.
Notes
Traditional cornbread is typically savory and does not contain sugar. If you like a more savory flavor, feel free to leave it out.
