Coconut Simple Syrup

a tropical syrup with a creamy and mildly nutty flavor perfect for tropical-inspired beverages
- 1 cup coconut sugar
- 1 cup filtered water
- 1 cup shredded sweetened coconut
In a medium saucepan, combine sugar, water and shredded sweetened coconut over medium heat. Bring mixture to a gentle simmer, stirring occasionally until the sugar dissolves.
Once the sugar is completely dissolved, remove the pan from heat.
Let the syrup cool to room temperature. Strain the mixture using a fine mesh strainer, then transfer liquid to a clean container.
Store the simple syrup in an airtight container in the refrigerator for up to three weeks.
