Chocolate Chip Cookies

These are the best warm gooey chocolate chip cookies that don’t require chilling in the fridge if you don’t have time!
Total Time 30 minutes

Ingredients
  

  • 1 cup unsalted butter
  • 1 cup brown sugar
  • ½ cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 ¾ cup all purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips

Instructions
 

  • Preheat the oven to 350°F.
  • Microwave two sticks of unsalted butter for only 30 seconds. Add to a stand mixer bowl.
  • To the stand mixer, add brown sugar and white sugar.
  • Mix on low to cream together butter and sugar for 3 minutes.
  • Add eggs and vanilla extract. Mix together for 1 minute.
  • Add flour, baking soda and salt and mix together until combined.
  • Fold in chocolate chips. Measure with your heart.
  • Chill dough in the fridge for 30 minutes (optional)
  • Scoop dough onto parchment lined baking sheets in 1 inch balls.
  • Bake for 8 to 12 minutes.
  • Let cookies cool on a sheet pan for 3 to 5 minutes, then transfer to a wire cooling rack.

Notes

You can also make the cookie dough by hand without a stand mixer. 
By not chilling the dough, you save time but your cookies will flatten out a bit more in the oven. If you chill the dough, they’ll remain puffy. 
I love making a big batch of these cookies and freezing them in Souper Cube Cookie Cubes, so I can pop one or two out and bake in our toaster oven whenever we want a sweet treat.
