Ingredients

  • 1 cup white sugar
  • 1 cup filtered water
  • 2 tbsp filtered water
  • ¼ cup dark brown sugar
  • 2 tbsp unsalted butter
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions

  • In a small saucepan, combine sugar and 1 cup of water over medium heat. Bring mixture to a gentle simmer, stirring occasionally until the sugar dissolves.
  • In a medium saucepan, add brown sugar, 2 tbsp filtered water, unsalted butter and salt over medium heat. Stir until combined and cook for 10-15 minutes until the butterscotch mixture reaches 300F.
  • Carefully and slowly pour simple syrup from step one, into the pan from step two. It may bubble up and harden, but whisk until the butterscotch has completely melted.
  • Once combined fully, remove from heat and mix in vanilla extract.
  • Let the syrup cool to room temperature, then transfer to a clean container.
  • Store the simple syrup in an airtight container in the refrigerator for up to one month.
