Step 2: Add the Carrots & Broth
- Dice carrots and add them to the pot.
- Cook for 1-2 minutes before pouring in vegetable broth.
Step 3: Add Beans, Tomato Sauce & Tofu
- Drain and rinse garbanzo beans (or kidney beans) and add them to the pot.
- Pour in tomato sauce or chunky tomatoes and stir well.
- Dice tofu into small cubes and gently stir it into the soup.
- Season with salt and pepper to taste.

Spiced Minestrone Soup
Ingredients
- 2 tablespoons minced garlic
- 1 medium sweet onion
- 2 shallots diced
- 3 tablespoons olive oil
- 1 tablespoon chili flake oil
- 3 to 4 large carrots
- 6 cups veggie broth
- One can drained garbanzo beans or kidney beans
- 32 ounce can of tomato sauce or chunk tomatoes
- 1 14 ounce block of tofu diced
- 1 box pasta noodles
- 3 cups chopped kale
- salt and pepper to taste
Instructions
- Mince fresh garlic and dice a sweet onion and shallot. In a large pot, heat olive oil and chili flake oil over medium heat. Add garlic, shallot and onion and cook until softened, around 5 minutes.
- Dice 3 to 4 carrots and add to the pot. Cook for 1 to 2 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Add drained and rinsed garbanzo beans, a can of tomato sauce and diced tofu to the pot. Stir to combine. Season with salt and pepper.
- Simmer soup for 15 minutes. Add one box of pasta noodles, and cook according to package instructions.
- Wash and dry kale, and roughly chop. One minute before the pasta is finished cooking, stir the kale into the soup.
- Taste and adjust seasoning as needed.
