Peanut Butter Cookies

This peanut butter cookie dough is great for peanut butter blossoms, or peanut butter cookies without the chocolate.
Total Time 45 minutes

Ingredients
  

  • ½ cup unsalted butter
  • ½ cup white sugar
  • ½ cup brown sugar
  • ¾ cup creamy peanut butter
  • 1 egg
  • 2 teaspoons vanilla extract
  • 1 ½ cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt

Instructions
 

  • Microwave one stick of butter for only 30 seconds. Add to the bowl of your stand mixer or a big bowl.
  • To the softened butter, add the sugars and cream together until smooth and well combined.
  • Add the egg and vanilla extract and mix until fully combined.
  • Add flour, baking powder, and salt.
  • Mix until a dough forms.
  • Refrigerate for 30 minutes to firm up the dough.
  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • Use a cookie scoop or spoon to portion out one tablespoon of dough. Roll each ball to make them smooth and round.
  • Place the dough balls onto the prepared baking sheet.
  • Use a fork to create a criss-cross pattern on top of each cookie, gently flattening them.
  • Bake for 10 to 14 minutes until edges are slightly golden.
  • Remove from the oven and let the cookies cook on the baking sheet for a few minutes before transferring to a wire rack.
  • After five minutes, add a chocolate to the top (optional) to make peanut butter blossom cookies, or just let the cookies cool completely.

Notes

I love making a big batch of these cookies and freezing them in Souper Cube Cookie Cubes, so I can pop one or two out and bake in our toaster oven whenever we want a sweet treat. 
I recommend using a good chocolate like Dove, instead of Hershey Kisses.
Sometimes I like to add 1 tsp of cinnamon to the dough to add flavor!
